Anyone got any ideas? I roasted a joint of pork last night and my crackling was non existent, just a jellified mess on the top.
I tried running it under cold water, and scoring the fat before putting it in the oven.
Still didnt work. It took a chocolate cheesecake to drown my sorrows after the meal.

My method: Wash, dry, score and salt. When the pork is done and ready to "rest", remove the (soon to be) crackling and finish in a very hot oven for 10/15 mins. Check frequently as it burns quickly.
Cold water's not going to help but the Chinese do like to use kettle of boiling water to shrink it a bit before roasting.
Peter's method is good - I just do it in reverse - make sure the joint is very dry then put into a very hot oven until the crackling really gets going then turn right down and cook slowly until done.
